Which dash cam should I get?
There's a plethora to choose from. I bought an Apeman C550, am very happy with it. Only downside is that it's front only.

From my research when I was shopping for one the blackvue cameras were cheap, well made, compact and easy to use.

But I didn't go with that I went with a maxcam 360c, it's a combo dash cam and new tech radar detector in one unit. It's pricier but I was driving long distances on the highway a lot at the time and the radar detector combined with the Waze app which has people report police on the road is incredibly effective. I bought a mounting kit for it which hooks to the rear view mirror instead of suctioning it to the window and I bought a kit which allows you to tap into the power mirror, it's a very clean and easy setup.
Something to keep in mind (not so much for FrancisK, more for the guys looking), make sure that there's an option to save the settings. I ordered an off brand ("comparable to the Apeman you've previously ordered") with a rear camera, but it wouldn't save the settings. So every time the vehicle powered off (even with the hard wire voltage sensor kit), it would go back to Factory Settings.

Now they have dash cams that, with the applicable app, can download the video directly to your phone. I've got my oldest shopping for one of those (that'll be one of their Christmas presents, right now they have an inexpensive Wallyworld one that plugs into the cigar socket). If the price is right, I may get two and replace mine as well.

I've seen them as high as $500, as cheap as $25. Even with the $25 one that powers off with the cigar socket, something is better than nothing.

Where is the video stored? On my phone? Do I need to set it to clear after 7 day (or however many days)?
If you get a hard wire kit (with an integrated voltage sensor), the camera will power off when the battery gets to a point that there's not enough juice to start the vehicle. That said, these dash cams draw next to nothing. I've gone out to my vehicle after two days of sitting, and the camera is still running.

The model I have has a slot for a Micro SD card (as many do). There is a setting that (to use your 7 day example) the 8th day will roll/copy over the first day. So any time you pull the SD card, you'll have the last seven days on it.

As far as the ones that you can instantly download to your phone, I don't know enough about those to speak confidently about them. I would assume there's an SD card as well as the phone/Cloud backup, but that's speculation on my part.

I imagine there's an online group (Reddit ? Facebook ?) that delves into the finer points of this dash cam or that dash cam. A Google search shows me links where people go on about the difference in pixels, or license plate freeze, or incident locking, or subscriptions, etc.

If I drove as a profession, I'd probably be interested in finding out more about that aspect of the dash cam possibilities... right now I'm happy with one that catches the action.

Mine is set to power off with the car but if it gets jostled, as if someone hit your car, it powers back on automatically. I'm not sure if I want it on all the time for the same concern you mentioned, I'll have to look into that thank you @Sam Malone.

Mine has an SD card in it that asks me to wipe it probably twice a year and it does it automatically from the unit in a few seconds. I could probably get a bigger SD card it's the one that came with it but having to push a button twice a year and 6 months worth of memory is fine with me. I can check the footage through the app on my phone but I also bought a little $10 iPhone SD card reader for my phone that i keep in the car which I can pull the sd card and read it just in case.
